The pie iron in its simplest form is a cast iron pan meets panini press. However, it offers a lot more control with your ingredients. You know when you take that first bit of a sandwich and everything falls out the back? With the pie iron, the two metal pieces clamp the sides of your bread together and encases all the ingredients inside. Exactly like a PB&J Crustable! Remember those?

Below are some pie iron recipes and thought starters to get you on a roll. It can be used for anything starting with savory cheesy goodness to healthy veggie presses to eggs over easy breakfast between two pieces of french toast.

1. The Classic Grilled Cheese

What you’ll need:

  • 2 slices ½”-thick Pullman or other white bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon unsalted butter
  • 2 ounces thinly sliced American cheese or cheddar (about 4 slices)
  • Freshly ground black pepper

Pulled Chicken or Pork Grilled Cheese

What you’ll need:

  • 2 slices ½”-thick Pullman or other white bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon unsalted butter
  • 2 ounces thinly sliced American cheese or cheddar (about 4 slices)

What you’ll need:

  • 2 slices of bread
  • 2 tablespoons butter
  • 1/2 cup prepared macaroni and cheese
  • 200 slices cheddar cheese (jk, just 3)
  • 1/4 cup shredded mozzarella cheese

BONUS:

  • 1/2 tbsp pickled jalapenos OR
  • 1 tbsp Bacon Jam OR
  • 1 tsp thyme2 tsp rosemary

4. Easy Brie-zy

Grilled Brie and Preserves

What you’ll need:

 

  • 2 (7-ounce) wedges Brie, rind removed and sliced
  • 8 slices sourdough, sliced 1⁄2 inch thick
  • 1 cup fruit preserves*
  • 4 tablespoons salted butter, divided

*Mix and Match with blackberry preserves, strawberry preserves, apricot preserves, and fig preserves.

5. Lobsta “Roll”

The Kennebunkport Lobster Grilled Cheese

What you’ll need:

 

  • 4-6 tablespoons (1/2 to ¾ stick) butter
  • 1 teaspoon chili paste
  • ½ cup Wisconsin Mascarpone Cheese, softened
  • 2 scallions, thinly sliced (white and green parts)
  • ¼ cup tomatoes, small dice
  • 4 slices country-style white bread
  • 4 slices Wisconsin Provolone Cheese
  • ½ cup arugula
  • 1 cup cooked Maine lobster, coarsely copped

Peach, Bacon, And Gouda Sliders on Pretzel Bread

What you’ll need:

 

  • 2 pretzel baguettes, each sliced into 8 equal rounds
  • 8 ounces gouda cheese, sliced into 16 squares
  • 4 slices thick-cut bacon, cooked and cut into pieces
  • 2 peaches, sliced
  • 3-4 tablespoons butter

What you’ll need:

 

  • 1 pound small carrots (or large carrots cut in half lengthwise)
  • 1 lime
  • 3 tablespoons fresh cilantro (chopped)
  • A few pinched of cumin
  • Olive oil
  • Kosher salt
  • Fresh ground pepper
8. Veggie Bomb

Cucumber & Avocado Sandwich

What you’ll need:

 

  • 2 slices Whole Grains and Seeds
  • 2 ounces herbed goat cheese
  • 1 Romaine lettuce leaves, washed and dried
  • 1/4 of a large cucumber, peeled and sliced
  • 1/2 large avocado, peeled, pitted, and sliced
  • Squeeze of fresh lemon juice
  • 1/4 cup alfalfa sprouts
9. Sea You in Heaven

Seared Scallops

What you’ll need:
For the Scallops:
  • 1 pound large sea scallops
  • 1 tablespoon salted butter
  • 1 tablespoon olive oil
For the Pan Sauce:
  • 1/4 cup dry white wine or chicken stock
  • 2 tablespoons salted butter
  • 1 clove garlic, minced
  • Salt and pepper to taste

  • 1 Jalapeno, Or More To Taste, Seeded And Diced
  • 3/4 cups Honey
  • 2 Tablespoons Chipotle Adobo, Or More To Taste
  • 1 Tablespoon Lime Juice
  • 3 Tablespoons Water
  • 1 clove Garlic, Pressed
  • 1/2 teaspoon Salt
